I came up with this while trying to put something together for a quick dinner to pack for work. I had some cooked chicken breasts in the fridge and threw this together. I kind of reverse engineered the recipe and made it starting with raw chicken breasts. This is really good! The cheese and salsa and ranch dressing melt together to form a creamy sauce. It was so good that I made it two nights in a row to take to work. Enjoy! Colette

Ingredients
1 cup shredded fat-free cheddar cheese 1 cup salsa 1/2 cup fat-free ranch salad dressing 1 tsp lemon pepper 3 breast uncooked boneless, skinless chicken breast Instructions
Preheat oven to 350*F. Place chicken breasts on a large sheet of foil. Sprinkle lemon pepper over the chicken. Fold foil up over chicken and bake for 35-45 minutes or until chicken juices run clear when cut. Remove chicken from oven and top each breast with equal amounts of salsa, cheese and ranch dressing. Recover loosly with foil and return to oven for 5-10 minutes or until cheese is melted. Cut each breast in half and serve immediately.
