Black Bean-Brown Rice with a Southwestern Twist (6 pts)

side dishes | Brown rice gets a lift in this Southwestern-inspired dish. Enjoy it as a side dish, main meal or as a vegetarian burrito stuffing, too.


1 cup rice, uncooked brown
2 cup water
2 Herb-Ox Vegetable Bouillon Cube(s), or other brand, or more to taste
1 tsp minced garlic
1/4 medium green pepper(s), diced
1/4 medium onion(s), diced
8 oz canned diced tomatoes, with jalapenos
15 oz canned black beans, rinsed and drained
1 tsp ground cumin

Instructions


1. Place rice, water, bouillon cubes, cumin and garlic in a small sauce pan. Bring to a boil and simmer until rice is tender. Add more water if needed so that there is always some in the pot. Cook until rice is tender.
2. Add pepper, onion, tomatoes and beans. Heat until boiling and then simmer for about 10 minutes being careful not to burn rice. Yields about 1 cup per serving.
